My nephew was over at my place in Boise last Saturday and saw my stand mixer sitting on the counter collecting dust. He bet me $20 I couldn't make a loaf without it, so I said watch this. I mixed that dough by hand for 12 minutes, got flour on every cabinet, and when I flipped it onto the counter it slapped back and a wad of it flew up and stuck to the ceiling. I had to get a spatula taped to a broom handle to scrape it down while he laughed so hard he almost fell off the stool. The loaf still came out fine, decent crust, good crumb, and he paid up. Now there is a faint gray smear on my ceiling I can't get off. Has anyone figured out a trick for kneading wet dough without turning the kitchen into a war zone?
