My cousin from Kansas City told me to stop soaking my wood chips
He said 'you're just cooling your fire and making dirty smoke' while we were smoking a brisket. I tried it dry on my next cook and the flavor was way cleaner. Anyone else skip the soak?

My uncle used to soak his chips in apple juice, swore it was the secret. His ribs always tasted like a campfire that got rained on. I just use a dry rub and a water pan now, seems to work fine.

Hah, that apple juice thing sounds wild. I tried soaking chips in beer once and it just made everything taste bitter. Dry rub with a little brown sugar and a water pan is the way to go, keeps it simple and the meat stays moist.
