Two years ago I grabbed a Gateway drum for about $300 and it turned 12 hour packer briskets into 7 hour cooks with way less babysitting, but my buddy says drums run too hot and you lose the bark you get from an offset, so now I'm second guessing whether cheap and fast beats expensive and slow, what do you all run?
