Shoutout to lamb rack pros for speed tips

Last week, we had many lamb racks to trim. I used a lot of time on them. My boss wants me to be quicker. How do you trim fast but keep the meat good? I could use some help.

Start with a sharp knife. Follow the bone close. Trims fast and leaves good meat.

Following the bone close, like @hannahmiller mentioned, is the way to go. It's one of those things where rushing just makes more work later, kind of like when you skip steps in a recipe and ruin dinner.

Makes sense, rushing through trimming always backfires just like in cooking. When you follow the bone close, you get all the meat off without leaving bits behind. @hannahmiller had it right with the sharp knife tip, that makes following the bone way easier. If your knife is dull, you end up forcing it and messing up the cut. Taking your time here saves so much hassle later, lol.
