Line cook at my old spot salted the pasta water like the ocean, and I finally said something
I watched him dump half a box of kosher salt into a 40 quart pot at the Italian place on 5th, and the finished dish came out almost inedible for a table of 8. I pulled him aside after service and showed him the right ratio is about 1 tablespoon per quart, not a handful, and he actually thanked me for it. Has anyone else had to correct a coworker mid-shift, and how did you bring it up without starting a fight?
