Pro tip: the $340 used reach-in cooler I bought off a guy in Fresno died on night 2 of a 4 day prep
Bought it from a restaurant that shut down near Fresno for $340, and it held temp fine for the first day of prep. Night two I walk in at 6am and the whole thing is at 52 degrees, so I tossed about $200 of short rib and fish. Turns out the compressor was on its way out and the guy knew it. Any of you ever gambled on used kitchen gear and actually won? Because I'm 0 for 2 now.
