Your idea to ferment food scraps into snacks is exactly how I cut down waste at home. I keep a jar on the counter for veggie ends like broccoli stems and pepper cores. Just cover them with a salty brine and let them sit for a week. Fermenting turns would be trash into something we actually eat. I even do this with fruit scraps for tangy sodas. It's a simple habit that makes a big difference for the planet.

When I tried fermenting carrot tops last summer, the jar exploded from gas buildup. Most guides don't warn about pressure checks with scrap ferments. If your brine ratio is off, you're growing bad bugs alongside the good ones. I lost a whole batch to mold because my kitchen was too warm. It's a good idea but needs more care than people say. You can't just set it and forget it like some posts claim.
