Rant: why do some apps bury the undo button but others get away with a simple swipe?

I compared a bank app that puts undo behind a three-dot menu versus a note app that lets me shake to undo, and the extra tap cost me a lost grocery list last Tuesday, so which hidden-safety design actually protects users when muscle memory bites?
