Serious warning about the new flour at the big box store on 5th
Honestly, I grabbed a bag of their store-brand all-purpose for a big wedding cake order last month and the protein content was way off. The crumb structure was so weak the tiers almost collapsed during transport. Has anyone else tested this batch or found a reliable bulk alternative?

I used to swear by that store brand for my regular baking. After a batch of gummy cookies that just would not set, I had to switch to a different supplier. The quality seems to have really dropped.

My last batch of those store brand chocolate chip cookies spread into one giant, sad pancake on the sheet. I had to break it apart with a spatula and pretend they were "cookie brittle." It's like they changed the formula but forgot to tell the flour. I've gone back to the national brand in the yellow bag, and my cookies actually look like cookies again. The difference is honestly night and day.
