Update: I thought my starter was dead after 6 weeks in the fridge, but it doubled in 4 hours once I fed it rye flour
I was ready to toss the whole jar after two flat loaves in my Cincinnati kitchen last Tuesday, but a 1:1:1 feed with dark rye brought it back stronger than the day I made it, so what flours actually wake up a sleepy starter for you?
Does rye really wake it up or does it just look that way because the dough is darker and you can see the rise better? I have played with this a lot and my take is that sleepy starters do not care much about which flour you use, they care that you fed them at all after weeks of sitting there starving. A 1:1:1 feed of plain bread flour would have perked yours up too, you just would not have noticed it in the jar as fast. Rye has more stuff in it that the yeast likes, sure, but the big thing is you finally gave it food and warmth. If you want to prove it, split the jar next time and feed one half rye and one half white, then tell me which one really doubles first.
