Dropped $85 on a bread proofing basket set that made my dough stick worse than a plain towel
I kept seeing those fancy banneton baskets all over my feed and figured my sourdough would finally look like the bakery stuff. Paid $85 for a set of two with the linen liners and a little scraper, and the very first bake the dough glued itself to the cane like it was superglue. I floured it heavy the second try, still stuck, and scraping it out wrecked the shape I'd worked on for two days. Third attempt I said forget it and went back to a floured dish towel in a mixing bowl, and the loaf came out perfect with a way nicer crust. My wife pointed out I could've bought 20 pounds of good flour with that money instead. Has anyone actually gotten these baskets to work, or do you just fight the sticking every single time?
Man that stings, $85 for something that fights you harder than a cheap towel is rough. I've heard you gotta really cake the rice flour in there and even then it's hit or miss, so you're not crazy for going back to the bowl and towel. Your wife's math on the flour is brutal but she's not wrong lol.
