Found out my offset smoker loses 40 degrees when the wind picks up past 8 mph
I was smoking two pork butts last Saturday in my backyard here in Amarillo and could not figure out why the temp kept dropping on me. My neighbor swung by with one of those little handheld wind meters and it was reading 9 mph, and sure enough every time a gust hit my smoker the dial fell about 40 degrees. I had been blaming my fire management for months when it was really just the breeze hitting the thin metal on my cheap offset. Ordered a welder's blanket to wrap the cook chamber and it held within 10 degrees the next run. Has anyone else had wind wreck their temps like that, and did a blanket actually fix it for you or should I be looking at a different setup?
