Seriously though, it's just sauce. People act like their regional BBQ thing is some sacred rule.

Actually in some places the sauce is part of the cooking method, not just a topping. That's where the rules come from.

Man, I was the same way until I had real Carolina vinegar sauce on whole hog. That sharp, peppery stuff cuts right through the fat in a way nothing else does. It's not just a topping, it's part of the cooking. Changed my whole view on what sauce is even for.
