That 90 degree day in Austin wrecked my whole brisket cook
I was chasing 225 on my offset last July and the ambient heat made my firebox run 80 degrees hot no matter what I did. Opened the vents to cool it down and spiked the coals, ended up with a bark like leather and a stall that lasted 4 hours. Has anyone else fought summer heat swings this bad or am I just dumb for not cooking at dawn?
