Appreciation post: the old timer who told me to age my own beef in a mini fridge
I laughed at him back in March when he said a $60 used mini fridge from a garage sale in Fresno would beat my walk-in for small batches, but 45 days later the ribeye came out nutty and tender and my regulars started asking what changed. I ran two test roasts side by side, one wet aged and one dry aged in that little fridge, and the difference was not even close. Anybody else doing small batch dry aging at home, and how are you handling the airflow without a fan?
