I keep seeing people hack at a rib roast with a boning knife and it drives me nuts
I was at a shop in Spokane last week and watched a guy try to separate the ribs from the loin with a 6-inch flexible boning knife. He was sawing for like 10 minutes, wrecking the shape. That job needs a stiff cimeter or breaking knife, period. The right tool saves the cut and about 30 seconds of your time. Am I the only one who gets worked up over this?
Yeah the grocery store butcher counter thing is so real. I watched a guy try to cut a rack of ribs with what looked like a bread knife once, it was painful. Made me wonder if they just hand anyone an apron back there.
