Burnt 40 portions of sauce at the Saturday rush and had to think fast
Was working the line at a spot in Austin last month and my sauce pot boiled over right at 7pm with a full board of tickets. I grabbed the pan off the burner, tossed the scorched top layer, and rebuilt it with a fresh base in about 8 minutes. Told the expo we were 10 back and he started pushing apps to buy me time. Nobody sent anything back that night, which shocked me. What do you all keep on hand for quick sauce saves when the clock is against you?
