Debate: Should we brine poultry overnight or is 4 hours enough? I got weird results both ways

So I tried brining a chicken two different ways last week to see which was better. Did one bird overnight in a salt sugar mix for about 12 hours and another for just 4 hours before roasting. The overnight one came out super juicy but the skin was almost too salty and kinda rubbery. The 4 hour one had way better crispy skin but the breast meat was a little dry in spots. My kitchen was a mess and my wife said both were good but she liked the 4 hour better. Now I'm wondering if the overnight method is overhyped or if I just messed up the salt ratio. Has anyone else found that shorter brines work better for achieving that perfect balance of moist meat and crispy skin?

6 hours at room temp brine is the actual game changer nobody talks about. I did a test last summer with three chickens at 4, 6, and 12 hours all at fridge temp and the 6 hour one came out way better than the other two. The key thing I found is letting the brine cool completely before adding the bird so it doesn't start cooking the outside early. Then after rinsing I put the chicken on a wire rack in front of a fan for 20 minutes before roasting. That dried the skin out enough that it got crispy while the meat stayed juicy without going rubbery or oversalted.

Oh man, I feel you on the "too salty and kinda rubbery" skin thing - I ruined a beautiful bird that way once. I found that 6 hours in the brine hits the sweet spot for me, it gives the meat enough time to get juicy but doesn't overdo the salt on the skin. The trick is to rinse the bird really well after brining and pat it bone dry with paper towels before it goes in the oven. Also, I started leaving the chicken uncovered in the fridge for an hour after rinsing, and that helps the skin get way crispier. So yeah, I think 4 hours might be a bit short for the meat but overnight is definitely too long for most home setups.
