Hit my first 100-cover night and it nearly broke me
Last Saturday we did 98 covers and I thought that was busy. Tonight we hit 107 and I ran out of prep by 8pm. Had to start pulling protein from the backup freezer and defrost in the sink. You ever hit a number that just blindsided you and made you realize your prep system is way too thin?

The backup freezer trick is a lifesaver but it feels like gambling every time. What worked for me was adding a buffer to my prep numbers after a similar 100+ cover night. I started overprepping by about 20 percent on the stuff that runs out first like proteins and sauces. Also shifted my timeline to get a second round of prep done during the afternoon lull instead of waiting until the rush hits. It's not perfect but it buys you a cushion when those surprise numbers show up.
