My knife skills got better in 3 weeks once I stopped watching my hands
I cook at a spot in Portland and for about 2 years my prep was slow and my cuts were all over the place. Then one of the older guys on the line bet me I couldn't do a case of onions without looking down. Took me 3 weeks to get through a whole case in one go without peeking. First try I nicked my knuckle twice and the onion slices were crooked as hell. What changed was I started feeling the blade against my knuckle instead of watching the tip, and my left hand just kind of learned the claw on its own. Last Tuesday I did 40 pounds of onions in about 22 minutes and only two pieces were too thick. My chef walked by and didn't say a word, which for him is basically a parade. If you've tried this, did you start with onions or something softer like mushrooms first?
