Vent: Double-clarifying butter feels like overkill

I keep seeing recipes that insist on clarifying butter twice. It takes extra time and burns through product. What's the real benefit here?

Honestly, I thought it was overkill until I tried making ghee without double clarifying. Tbh, the flavor was way cleaner and it didn't burn my pancakes. Now I do it every time.

Used to skip the second clarifying step too, seemed extra. Tried it once and damn, the smoke point is no joke lol. You're totally right.

Double clarifying is a game changer for people with dairy issues too. My sister can't handle regular butter but she's fine with my ghee after that second pass. It pulls out way more of the milk solids that cause problems.
