Walked into a steakhouse kitchen and saw them using pre-shredded cheese

Was in Denver last week for a pop-up and peeked into this popular steakhouse kitchen. Dude was pulling out bags of pre-shredded cheese for their salads. Has anyone else seen that in a place charging $50 a plate?
