Warning: walked into a diner kitchen in Scranton last week and saw no one using a thermometer
They were eyeballing oil temps for fries and throwing steaks on based on feel. Has anyone else seen this slipping in smaller spots or am I just getting old?

Youre mixing up two different things there. Small joints not using thermometers during rush is a safety issue, not just a shortcut. The problem isnt that they skip it when busy, its that they never use them at all. Ive worked in food service and even a busy fry cook can temp oil in five seconds with a good infrared gun. If theyre eyeballing steaks by feel, thats a recipe for sending out raw meat or hockey pucks. Thermometers are cheap and fast, theres no excuse to ditch them entirely.

Read a food blog saying half the small joints quit using thermometers during the rush.
