Pantone book vs monitor: which one do you actually trust when the ink comes out wrong?

I spent 4 years at a shop in Portland matching greens by eyeballing the screen and then tweaking, but last month a client rejected 200 shirts because my 'correct' print was way more olive than their swatch, and now I'm wondering if I should have been using my Pantone book as the truth from the start instead of just a backup reference, so who else has flipped their loyalty and which side got you better results?
