Why do so many techs say you must flush every coil after a burn out?

I've fixed several units without flushing and they ran fine for years. What's the real risk if you just replace the filter drier?

But have you checked the compressor oil for acid after skipping the flush? I mean, idk, maybe it's just me but that's where I'd worry about long-term damage.

Used to skip flushes without a second thought. Thought it was saving time and money. Then had a compressor lock up last year. Tore it down and found all the seals eaten away. Oil analysis came back with crazy high acid numbers. Now I test the oil every single time, flush or not. Your point about long-term damage is exactly right.
