TIL I was peeling ginger wrong for 15 years until a cook in Portland called me out
I was at a little Thai place near my apartment in Portland last Saturday and the cook came out to grab some herbs. I mentioned I love cooking with ginger but hate peeling it with a spoon because it takes forever and wastes half the ginger. He looked at me funny and said why are you using a spoon? Just scrape the skin off with the edge of a regular teaspoon. I told him that IS a spoon. He laughed and grabbed a teaspoon from the counter, showed me how the tip of a teaspoon digs right under the skin without cutting into the flesh. I felt like a total idiot because I'd been using a soup spoon this whole time, the big round kind, and it slips and takes off chunks. After 3 tries with a regular teaspoon I got a whole knobby piece peeled in about 20 seconds flat. Has anyone else had a basic kitchen skill they just did wrong for years without realizing?
