My cakes kept sinking in the middle until my aunt in Duluth said to stop opening the oven
I baked 5 test cakes last month and every single one caved in, then I left the door shut the whole time and it came out level. Now I need help with the top browning too fast, do I drop the rack or tent it with foil?
My grandma in Fargo told me the same thing after I ruined 3 angel food cakes in a row! I kept peeking every 5 minutes like a total rookie and they all fell flat as pancakes. Once I finally just set the timer for 35 minutes and walked away, perfect every time. For the browning issue, tenting with foil has always worked better for me than moving the rack down. I just wait until the top is as dark as I want it and then lay a piece of foil loosely over it, don't press it down or the crust sticks. Dropping the rack can mess with how the middle bakes so the foil trick is safer.
