My sourdough starter tried to take over the kitchen
I've been keeping a starter alive for about two months now, feeding it every day like a pet. Last Thursday, I forgot to switch it to a bigger jar before bed. Woke up to a bubbly, sticky mess all over my counter because it had literally pushed the lid off overnight. It looked like a science experiment gone wrong. I managed to save most of it, but cleaning up the dried-on goo took a solid 20 minutes. Anyone have a good trick for knowing when your starter is about to make a break for it?

The rubber band trick from taylor_barnes59 is smart for tracking growth, but it won't stop a really active starter from blowing the lid. I learned that the hard way too. A starter can double in size and still look fine, then keep going for another hour and pop the top. Using a jar that's at least three times bigger than your starter's volume is the only sure way. A straight-sided container also helps you see the rise more clearly than a curved one.

Pushing the lid off is a real power move. I put a rubber band around the jar at the starter's level after feeding, so I can see how much it's grown overnight.
