Almost bought a Traeger Ironwood, went with a used 22" WSM instead, and my first brisket stalled at 162
Two months back I was set on a pellet grill for the set it and forget it life, but a guy in Fort Worth was selling a 22 inch WSM for $180 so I grabbed it. First cook was a 9 lb packer and it hit 162 internal and sat there for almost two hours while I panicked and kept opening the lid. A neighbor who has been smoking meat for 20 years told me to just wrap it in butcher paper and stop messing with the vents, and it finally pushed through to 203. The bark came out way better than I expected for a first try, but now I'm wondering if I made the right call passing on pellets. Anybody here run both and have a real opinion on which one teaches you more as a beginner?
My buddy went the other way and got a pellet first, then picked up a used WSM off marketplace like 6 months later. He said the pellet made him lazy about fire management and his first few charcoal cooks were rough because he never learned to read the smoker. Now he barely touches the pellet unless he's doing a long overnight cook and wants to sleep. The stall you hit is normal, that wrap trick is the real lesson, pellets would've just hid it from you.
