Appreciation post: My neighbor in Austin told me his brisket secret three years ago

He said 'the fire needs to sleep too' and made me leave it alone overnight, which felt crazy. Anyone else have a piece of advice that sounded nuts but actually worked?

Remember to wrap it tightly so it doesn't dry out.

I used to just throw leftovers in the fridge uncovered. Wrapping it tight actually keeps my pizza crust soft for two days now.
