Just realized my temp control got way better this summer
Struggled with heat swings every time I fired up the pit. Started using a water pan and it really smoothed things out. What simple tweak changed your BBQ game?

Water pans can actually make things worse by creating too much moisture. It just covers up poor fire management skills in the first place. Have you tried just managing your vents better instead?

Totally get that. I season with water pans sometimes but vents are what really lock in good temps.

Question if water pans always cause too much moisture. I've used them in dry climates with good results. How do you fine tune vents for better control without a pan?
