Tried a Weber kettle for a brisket after 3 years on my offset smoker

Honestly, I thought offset smokers were the only way to get real bark on a brisket. I've been using my OK Joe for years, dealing with fire management every 30 minutes. Last weekend, my buddy Mike dared me to throw a packer on his $150 Weber kettle. I set it up with a slow n sear insert and a big water pan underneath. The temp held at 250 for almost 5 hours without me touching a thing. The bark wasn't as crusty but the meat was way juicier than anything I've pulled off my offset. Has anyone else made the switch and felt like a traitor?

My buddy Steve did the same thing last summer with a $80 used Weber he found on Craigslist and hasn't touched his 500 gallon offset since.

Oh man, @barbara_moore73 I gotta say your buddy Steve might want to double check that offset - I think you meant 500 gallon? Those things are huge, like the size of a small car. But yeah, I get the appeal of a simple Weber, they just work.
