Realized my lunch meal prep cost less than $2 per serving
I sat down last Saturday and added up the groceries for the rice and bean bowls I've been making for 3 weeks straight. Each bowl comes out to $1.87 including the spices and a squeeze of lime. Has anyone else done the math on their regular meal prep and been surprised at the real cost?

Yours is $1.87? My lentil soup costs $1.12 a bowl and I was shook. I use canned tomatoes and whatever veggies are on sale. Once I wrote it down I felt like I was basically robbing the store.

Nah, I'm gonna push back on this actually. When you add up the time spent chopping, the gas to get the store where those sale veggies are, and the fact that canned tomatoes have way less flavor than fresh ones from a farmer's market... that $1.12 bowl is probably more like $4.50 when you factor everything in. Plus lentils take forever to cook unless you have a pressure cooker, which is another appliance you had to buy. I'd rather just pay someone $7 for a decent bowl of soup and not have to scrub a pot afterwards.
