After tweaking the spice blend, my homemade sausages are FINALLY restaurant-quality.
The snap on the casing is SO satisfying.

Ha! Your post reminds me of the time I tried to make my own casings from scratch. I thought it would be easy, but boy was I wrong. I ended up with something that looked more like a balloon animal than a sausage. The dog was thrilled, but my dinner guests were not impressed. I learned to love the magic of a good snap after that.
