Tried hanging beef in the walk-in upside down after 30 years and it worked
Had a 1200 lb grass fed steer last month that was so stiff I could barely break the primal. My old mentor from the shop in Amarillo used to say cold shortening was the enemy, so I rigged a hook and hung the whole side neck down overnight. Next morning the loin cut like butter and I saved maybe 25 minutes on the breakdown. Sounds dumb but nobody in my crew believed me until they tried it on the next one. Anybody else flipping their carcasses or am I just late to this?
