A roaster in Asheville told me my pour was 'sloppy and rushed', and I've been chasing better cups since
Two years ago I was pouring water straight from a gooseneck kettle at full tilt, and a roaster at a small place in Asheville watched me brew and said those exact words to my face. At first I was annoyed, but then he had me slow down and pour in small circles from the center out, and I could actually taste the difference in the same beans I'd been grinding for weeks. He also pointed out I was brewing about 30 seconds too fast at a 1:16 ratio, so I dropped to 1:17 and let it drain slower. Now I use a timer every single time and my morning cup is way less bitter. Has anyone else gotten blunt feedback from a barista or roaster that actually stuck with you?
Honestly that roaster sounds like he was just flexing because he had an audience, and half the "rules" people swear by are just what worked for them on their setup. Chasing someone else's exact ratio and pour is a good way to end up with worse coffee than just dialing in what tastes good to you.
