I watched a barista in Portland switch from a blade grinder to a burr grinder and the difference in the crema on the espresso was night and day after just one pull.

He explained that the blade grinder was smashing the beans unevenly, so the water couldn't extract the oils properly, which got me wondering has anyone else seen a similar jump just by changing one tool?

Is it kind of wild how one small tool swap can make everything else click into place? @tyler822 is totally right that grinders get ignored, but I think it's like that in a lot of hobbies where the boring piece of gear is actually the most important. It's like a chef getting a good knife or a musician switching to decent strings - the basic stuff either makes or breaks everything you do after.

Probably the biggest tool upgrade I ever saw was at a shop in Seattle where they switched from a Mazzer to a Mahlkonig and the shot consistency jumped like crazy. Grinders are honestly the most UNDERRATED part of the setup.
