Had a ceiling seam fail on a job in Phoenix because I rushed the second coat
It was a big living room, maybe 90 degrees inside, and I didn't let the first coat of mud set up long enough before I went back over it. The whole seam sagged overnight and I had to cut it out and start over, which cost me a full day. How do you guys handle timing your coats in really hot, dry weather?

Waiting an extra hour like @aaron_kim46 suggests can still backfire in that heat. The mud skins over fast but stays wet underneath, which is what causes the sag. Better to just do the first coat and then leave the site for the day.

My last Phoenix job taught me to add an extra hour per coat in that heat. I treat the first coat like a bad sunburn and just don't touch it. What's your usual wait time when it's that hot?

Treating the first coat like a bad sunburn" is such a good way to put it. I mean, my usual wait time is basically until I stop sweating through my shirt, which is never.
