Sugar in ferments is useless, my latest batch shows why
Did a pepper ferment for hot sauce. Skipped the sugar completely. It worked faster than my old batches. Taste is way more authentic. Stop adding sweet stuff, it just messes with the real flavors.

Doesn't a little sugar help kickstart the fermentation though?

Last summer, my friend Ben added some sugar to his beer wort. It fermented so fast the airlock blew off.
