Visited a renovated hotel in Portland and the herringbone vinyl plank in the lobby had a weird hollow sound when you walked on it.

It was a click-lock floating floor, but the subfloor prep must have been off because the sound echoed through the whole entryway... has anyone else run into this with a big commercial glue-down alternative?

My friend's kitchen floor does that. Sounds like you're walking on a giant cereal box.

Actually, that crunchy sound usually means the floorboards aren't properly attached to the joists underneath. The nails or glue have probably worked loose over time. It's a pretty common thing in older houses, especially with changes in humidity.
