I was boiling pasta wrong for years until my Italian neighbor in Rome pointed out my pot was way too small.

She saw me using a 2-quart pot for a pound of spaghetti and said, 'You need a big pot with lots of water so the pasta can move and cook evenly,' which made me wonder, what's the most basic cooking rule you learned embarrassingly late?
