I keep seeing guys torque lug nuts with impact guns around here

At the shop in Cincinnati we found three wheels warped last month from overtightening, and one came off on the highway because it was too loose. Why are people skipping the torque wrench step on customer cars?

I mean, I saw a guy once use his impact to put a license plate on, so anything's possible I guess.

My torque wrench is older than my kids so I'm probably the problem here...

Whoa, I gotta disagree a little here. I've been turning wrenches for over 15 years now and I see it the other way. In my experience, a good impact gun with a torque stick or a decent feel for the tool gets you close enough 90% of the time, especially on steel wheels. I've seen more problems from people using rusty old torque wrenches that haven't been calibrated since the '80s than from guys who know their impacts. Your mileage may vary but I'd bet those warped wheels had more to do with the cross-threading or dirt on the studs than the tool itself.
