Nailed a sourdough batch last Thursday that shocked me

I've been fighting with my starter for months. Kept getting flat dense loaves. Last Thursday I finally got that perfect ear and crumb. Took 4 attempts but it opened up like a dream. Anyone else struggle with getting their hydration right on the first try?

Four tries is nothing to sneeze at. I went through six or seven batches before I got one that didn't look like a pancake. The hydration thing is tricky, especially if your flour is different every time you buy it. That perfect ear and crumb is a great feeling though. Makes all those flat loaves worth it in the end.

Honestly I'd be more shocked if my sourdough actually shocked me since mine usually just sits there looking like a deflated basketball. Congrats on the win though, four attempts is basically a professional baker in my book. At least your starter finally got its act together unlike mine which still has the energy of a sleeping cat.
