Tried using a local honey in my sourdough starter and it basically went to sleep for 3 days

Yeah, that "total brick" thing @mitchell.shane mentioned is spot on. In my experience, raw honey has stuff in it that can really slow the yeast down. It's like it puts the whole starter to sleep. I just stick to plain flour and water now. Adding anything else is asking for trouble and a lot of extra feedings to fix it.

Oh man, I did that once and it was a total brick. I ended up feeding it with just plain flour and water for a few days, no sweet stuff at all. It finally woke back up when I switched to whole wheat flour for a couple feedings. That local honey can be pretty strong, right? Maybe it just needed a reset.
