Just hit 500 hours on my offset smoker and the brisket changed

I got this old Oklahoma Joe's offset back in March and have been running it every weekend since. After about 500 hours of cook time, I did my usual Central Texas style brisket last Saturday. The bark was darker and set way faster, and the smoke ring was almost an inch deep, which never happened before. It seems like the metal is finally seasoned right. Has anyone else noticed a big jump in quality after hitting a certain number of hours on a new smoker?

That 80% stat they keep throwing around seems way too high. Hard to believe it's that big a deal, @jordangibson.
