Went to a BBQ competition in Kansas City last weekend and saw something that worried me about food safety

That "something that worried me" phrase hits close to home. I've noticed a pattern where people just assume outdoor events have lower standards than restaurants, but that's backwards thinking sometimes. At a local fair last summer I actually watched a vendor pull meat off a smoker with bare hands then go back to flipping burgers without washing up. Nobody said a word because it was a "fun" atmosphere. It's wild how people let their guard down about basic cleanliness just because there's a festival vibe going on.

That "nobody said a word because it was a fun atmosphere" part really sticks with me. It's like once you put a festival or a competition label on something, people just switch off their normal food safety brain. I've seen the same thing at potlucks and family gatherings where folks will eat a casserole that's been sitting out for four hours and nobody blinks. We'd never accept that level of risk at a restaurant, but put a funny apron on the guy and suddenly it's fine. It's a weird double standard where we trust people more just because they're doing it in a backyard or a competition setting. The fun vibe makes us forget that bacteria don't care if you're having a good time or not.
