Had a guy at the Denver Garden Show tell me my soil pH was all wrong

I was at the Denver Garden Show last spring, just walking by one of those free soil testing booths. This older guy, maybe 70, asked if he could test a sample from my bag. He dipped the probe in, looked at the meter, and said 'Your pH is 7.8, you're growing in concrete.' I had been blaming my watering schedule for yellowing leaves on my hydrangeas for two years. Turned out it was the soil, not the water. Has anyone else had a random stranger at an event spot something obvious you missed?

Start with some elemental sulfur or aluminum sulfate this fall. The pH change takes months so you gotta be patient. I added iron sulfate to my blueberry bed and it took nearly a year to drop from 7.5 to 6.0.

Did you test the soil first to see how low you actually needed to go, or just guess at the amount? I keep hearing mixed advice on how much sulfur to add per square foot.
