Can we talk about how my roommate's $30 grocery budget changed my whole approach?
So my roommate Sarah came home with a cart full of food last week and said she only spent $30. I was shocked because I usually drop $60 on way less stuff. She told me she plans meals around what's on sale at Aldi and uses leftover veggies in stir fries or soups. I tried her method this week and cut my spending in half, but I'm curious if anyone else has tips for stretching staples like rice and beans without getting bored.

Oh wow, that's awesome for your roommate! My friend Jenna tried something like that and ended up making a giant pot of chili with rice and canned tomatoes she got for like 50 cents each. She froze half of it and said it lasted her two weeks with some cheese on top. She got real tired of it by day four though, so she started adding different spices or a fried egg to change it up.

It's funny how we all figure out the same tricks eventually, right? The whole "cook one giant thing and freeze it" thing is basically a survival skill at this point. I see it everywhere now, like how people will meal prep a big batch of something on Sunday just to survive the week, but then get sick of eating the same thing by Tuesday. It's a real balancing act between being smart with your money and not wanting to throw your bowl against the wall because you've had chili five nights in a row.
