Three days of sanding and still not flat, I give up on this tabletop

I spent 72 hours over four nights on a walnut dining table, went through 80 to 220 grit, and the middle still dips by 3 millimeters. I even tried a straightedge check after each pass, but my arms just can't keep it consistent. Has anyone else had to just walk away and pay a pro to flatten a slab?

Honestly, sometimes you just gotta know when to quit... walnut's too pretty to ruin with a wobble anyway.
