I used to taste everything with a clean spoon, now I just use the same one and wipe it
I used to grab a fresh spoon every single time I tasted a sauce during service. That meant like 30 spoons in the dish pit by the end of a Friday night at the spot I work in Portland. About 8 months ago our dishwasher quit mid shift and I got tired of running out of spoons, so I started keeping one in my apron pocket and just wiping it on a towel between tastes. Honestly my seasoning has not changed at all, and the dish pit is way less backed up now. Does anyone else do the pocket spoon thing or am I just gross?
Been doing the pocket spoon for years and I'll die on this hill. Hot sauce, soup, pan sauce, whatever, that spoon lives in my apron and gets a wipe on the rag. You taste with your tongue, not the spoon, so a quick wipe is all you need. The whole fresh spoon thing is just habit, not food safety. Dish pit backs up way less and nobody's gotten sick off my cooking yet.
